Quesos Canaan: A Local Dairy and Café in Canaan
Quesos Canaan is one of those nearby places that feeds the valley well, from fresh cream and butter to aged cheese, all crafted on site.
Quesos Canaan is a nearby quesería in Canaan de Rivas, Pérez Zeledón, just on the other side of Chucuyo mountain from 4C Ranch, and we are glad to have them close. We get fresh cream, butter and cheese from them, and when you walk into their tienda you can see right away that this is more than just a dairy counter. There is the café out front, the cheeses, the milk, the butter, and then the aging room with whole wheels of cheese, ruedas, waiting their turn.
What I like about the place is that you can feel the work behind the food. They are making lunch, pouring espresso, selling homemade cake, and at the same time moving milk into something that will feed people well. That kind of neighboring food business matters out here. It means shorter trips, fresher ingredients, and real relationships between the people raising animals and the people sitting down to eat.
There is another part of Quesos Canaan that I especially appreciate. They are using manure from their cows to produce biogas for electricity, and then taking that same manure through fermentation and worms to make lombricompost for the flowers and gardens around the café. You can see the cows, see where the manure comes from, and see how the whole thing ties back into the place. That way of turning one job on the farm into the next one is something I always pay attention to.
